What is it?
Alpha-isomethyl ionone, naturally occurring in plants, is a terpenoid (sesquiterpenoid) ketone with an aromatic violet compound with a floral-woody odor from the ionone family. It is utilized in olfactory compositions crafted by perfumers. It is one of the scent components in the world-famous perfume Chanel No. 5.
Where does it come from?
Alpha isomethyl ionone is found naturally in Brewer's yeast (Saccharomyces cerevisiae) and Mokryeon (Magnolia Kobus).
