Where does it come from?
Hydroxytyrosol is derived from the olive tree, specifically from its fruit and leaves. It is naturally generated during the hydrolysis of oleuropein. This converts oleuropein, the main phenolic component of olives, into hydroxytyrosol, a much more active molecule. The highest concentration of hydroxytyrosol is found in olive leaves. Our conservation of over 30,000 olive trees is organically eco-certified and located in a mountainous region of Spain.
